Wild State Cider Raspberry Hibiscus. 6.1 % ABV.
Wild State Cider, Duluth, MN.

Clear and rosy. No head.

In the nose: Bright and tart. Very berry, brisk and floral.

In the mouth: More of the above, playing on the palate. Crisp, fruity, floral and delightful. Berries aplenty. Light bodied, delicious. Refreshingly tart. Go drink it.

A cider on the sweeter side, this tart pink cider is a must-have. Raspberry, hibiscus, tart, bright.

Inbound BrewCo Petal Pounder Hibiscus Saison

Inbound BrewCo Petal Pounder Hibiscus Saison. 5.5 % ABV. 20 IBU. Inbound BrewCo, Minneapolis, MN.

Fairly hazy, bright crimson coloring, slim white head adorning the top.

In the nose: Floral, funky, lightly tart, plenty of fruit.

In the mouth: tart hits first. Hibiscus reigns supreme, with fresh fruity associations coming in second. Light bodied, lower alcohol, drinks like a dream. Delightful. I could pass the time away with a few of these.


A fresh and floral saison brewed with a pounder's worth of real hibiscus petals. It's as tart as a cranberry and as pink as a summer sunrise. Built for a season of pedals and petals.

Venn Batch #47 Imperial Hibiscus Saison

Venn Batch #47 Imperial Hibiscus Saison. 12% ABV. 30 IBU. Venn Brewing, Minneapolis, MN.

Here's a crowler I bought a month ago, reviewed a few days ago, and was still on tap a week ago, amazingly. I can imagine plenty of people shirk away when they see "12%". Their loss.

Clear, bright crimson color, slim white head.

In the nose: sweet, floral, fruity. Low bitterness. Lovely stuff.

In the mouth: Full bodied, smooth and fruity. Nice bitterness, malty mouthfeel, fully fruity and flowery. So tasty and clean that the 12% slips right past me. Completely effortless. Quite delicious, this. I may have to go back for more, if it's still around.



Floral, tart, super dry.
An epic, bone-dry saison aged on hibiscus flowers.

Malts: Pilsner.
Hops: Warrior, Cascade, Centennial.
Yeast: Belgian Ale.
Other: Clear Candi Syrup, Hibiscus Flowers.

Dave's BrewFarm Hibiscus Lager

I know that some of you will read my posts and be interested in the beers, hoping to get yourself a taste of it, too. I have to disappoint you with this one. I picked it up on the final BrewFarm date of the year. Dave will close for 2 months to pursue projects in Cambodia. Maybe there's some left in January? Let's go there and find out. Meanwhile, these notes.

Dave's BrewFarm Hibiscus Lager. 6.1% ABV. Bottled on October 27, 2017, purchased 10/29. Consumed 11/5.

Clear-ish, crimson colored, beautiful ivory head, with a slight pinkish tint, soon to crumble.

In the nose: fresh, vibrant, flowery. Lovely.

In the mouth: Starts out with a palate-gripping slight tartness, then that fades and all is smooth and mild. Some graininess in the texture. Hibiscus flavor brightens up the mouth on the regular. Nice hoppiness keeps it interesting, lively, and fun. Light-bodied, easy drinker, soft finish.

"Another in the botanical series, using lager yeast, couple with Pils and Ashore Mild malts, Mount Hood and Nugget hops, and a late addition of hibiscus flowers. Pretty beer."

Fair State Roselle

Fair State Roselle. Hibiscus Sour. All: 5.7%. IBU: 19. Fair State Brewing Cooperative, Minneapolis, Minnesota.

I’ve reviewed this before when it was Lactobac Two, but haven’t had it since it’s been repackaged, renamed, and canned. Why not give it another whirl? Thanks, Sample Man!

Clear, bright crimson coloring, pinkish head, which stays until it splits.

In the nose: fruit, flowers, and funk. The strangeness quickly outstrips the other parts, and it remains intriguing and arousing.

In the mouth: here’s where the pucker begins. Intense, refreshing and satisfying. Man, that hibiscus! Lighted bodied, no real hop presence, lean malt background. Solid sour ale, tart and tasty. Quite delightful.

From the can: “Sour beer brewed with hibiscus. Tart and floral.”

Fair State Lactobac Two

Fair State Lactobac Two.

This is one that I did not actually order for the Acadia Cafe, but I would have. I'm enjoying one last glass before it's too late, and it's gone. Who knows if we'll ever see it again? One never knows, does one?



Clear, bright crimson coloring, with pinkish tint reflected in the foam, which sits as a tight ring and leaves a little lace.

Aroma is rosy, sweet, fruity, utterly lovely.

In the mouth, a different story unfolds. Tartness takes command, fruit fast behind. Wildness and funkitude is in full command. Medium/lightish body. Hibiscus flavoring rises up and overcomes. Very flowery. Tart and sour flavors rush in again and try their best to dominate the overall tone. A little bitter from time to time, but sour and sweet are the main competitors, battling it out, with sour gaining the lead.

In the end, this is a nice little dance between bitter, sour and sweet, with the ultimate winner being the palate of the drinker. Damned tasty stuff. Best of all worlds, frankly.

The second in our LÄCTOBÄC series of lactobacillus-soured beers, TWO is infused with hibiscus flowers at flame-out, lending the beer a sharper tartness, floral and citrus aromas/flavors, and a red hue.
