Fair State Lactobac -the can

Fair State Lactobac -the can. 5.6% ABV, 10 IBU. Fair State Brewing Cooperative, Minneapolis (& St. Paul), Minnesota.

LÄCTOBÄC is our mixed culture playground. We've dropped the numbers and the kettle souring, but the fun remains. Fermented with Saison yeast, Lactobacillus, and Brettanomyces, this batch features fresh ginger, lemongrass, and lemon zest. Funky, drinkable, and satisfyingly summery.

Hazy, dull yellow, slim & quickly disappearing head.

In the nose: fresh citrus, ginger, funky, wild. Lemon sticks out.


In the mouth: Yow! Tart, indeed. Big blast of sour citrus up front, then along comes spicy ginger. Delicious. Lean bodied, light, crazily consumable. It's a drinker, alright. Goes down smooth, until the tart holds that grimace tight, fierce funk, intense sour, and then smooth and refreshing.
